Flat-Bread Pizza


Feeling like whipping up some Italian today? Here's a quick and simple recipe that you can use on any weekday for a quick delicious meal.

Ingredients:
Virgin Olive oil 1 tbsp
Mixed vegetables 2 cups
Oregano 1 tsp
Thyme 1/4 tsp
Sage 1/4 tsp
Parsley 1 tsp
Pine Nuts 1 tbsp
Flat bread 1
Grated Cheddar Cheese 2 tbsp
Grated Mozzarella Cheese 4 tbsp
Salt To Taste

Method:
  1. Saute the veggies of your choice and season with salt, Oregano, parsley, sage, thyme. 
  2. Spread the cooked veggie mix over the flat-bread leaving an edge of approximately 2 cm around the bread.
  3. Then add the pine nuts and then sprinkle the cheese. 
  4. Bake the pizza for 7 -10 mins in a pre-heated oven at 180 degree Celsius or till the cheese melts and the  bread crisps slightly in the edges.

Notes:
  1. Use Mixed Italian herbs if you cant find the individual spices mentioned. 
  2. Oregano is the herb that gives the nice strong Italian aroma. 
  3. Use dry herbs if you cant find fresh ones. I generally use dry herbs as I always stock them in my kitchen and can make this dish with no planning at all.
  4. Replace Mixed Vegetables with any leftover curry of your choice and you have a fusion pizza. Try Shahi Paneer and you have a Indo-Italian Fusion. 
  5. Use sea salt instead of table salt and this will add to the flavour of your pizza.
  6. You can use Naan as a flat bread. It also works well with flavoured naans like garlic naan. 
  7. Cut these into long strips and serve these as appetizers and they will be a party favourite.
