Tomato Rice

Bay Leaf 1
Chilli powder 1 tsp
Cinammon Stick 1/2 Inch
Cloves 5
Coriander 1/4 cup Chopped
Cumin Seeds 1/2 tsp
Curry Leaves 5
Garam Masala 1/4 tsp
Ginger Garlic Paste 1/2 tbsp
Green Chilli 1
Mustard Seeds 1/2 tsp
Oil 2 tbsp
Onion 1 Cup Chopped
Rice 1 Cup
Salt To Taste
Sambhar Powder 1 tsp
Tomato 2 1/2 Cups chopped
Turmeric Powder 1/8 tsp
Water 1/2 cup

  1. Cook the rice and let it cool. 
  2. Heat oil in a wok and add mustard seeds, cumin seeds, cloves, cinnamon and bay leaves.
  3. Once the mustard and cumin seeds pop and the spices give out a nice aroma, add in the green chillies, curry leaves and saute for 10 seconds.
  4. Then add the ginger garlic paste and the onion and saute the onion till they soften and turn pink.
  5. Now add the turmeric powder and cook for around 10 seconds and then add the tomatoes. 
  6. Let the tomatoes cook. Mix the Sambhar powder, Chilli Powder and Garam masala with a tbsp of water and add it now.
  7. Add water as required to avoid the dish becoming too dry. 
  8. Finally mix in the rice and add salt to taste and your tomato rice is ready to be served.

  1. If your Sambhar powder is spicy, avoid adding Chilli powder. The amount of Sambhar powder and chilli powder added is depending on you spice preference.
  2. You can also use leftover rice to make this rice. You don't need to use fresh rice each time.
