Mediterranean Pesto Pasta

Courgette or Zucchini1/2 cup
Olive Oil1 tbsp

Oregano1/2 tsp
Pasta2 Cup

Potato1/2 cup
Red Bell Peppers (Capsicum)1/2 cup
SaltTo Taste
Thyme1/2 tsp
Yellow Bell Pepper (Capsicum)1/2 cup

  1. Prep the vegetables: Chop all the vegetables into chunks or slices. Boil the potatoes and saute the rest of the vegetables in 1 tbsp of olive oil. Cook the vegetables till they are done. 
  2. Cook the pasta: Cook the pasta in water as per the instructions on the pack. Drain the water from the pasta once cooked and coat it with 1 tbsp of oil.
  3. Mix the ingredients: To the cooked pasta add the cooked vegetables and the rest of the ingredients. You can serve this dish cold or heat it for a few minutes and serve as a warm main course.
  1. Do not slice the vegetables fine. Having them in chunks gives this dish a good texture.
  2. Add in some basil leaves and chopped rosemary if you can get your hands on to some.
