Ingredients:
Button Mushroom | 4 |
Coriander Pesto | 1 cup |
Courgette or Zucchini | 1/2 cup |
Olive Oil | 1 tbsp |
Onion | 1/2 cup |
Oregano | 1/2 tsp |
Pasta | 2 Cup |
Pepper | To Taste |
Potato | 1/2 cup |
Red Bell Peppers (Capsicum) | 1/2 cup |
Salt | To Taste |
Thyme | 1/2 tsp |
Yellow Bell Pepper (Capsicum) | 1/2 cup |
Method:
- Prep the vegetables: Chop all the vegetables into chunks or slices. Boil the potatoes and saute the rest of the vegetables in 1 tbsp of olive oil. Cook the vegetables till they are done.
- Cook the pasta: Cook the pasta in water as per the instructions on the pack. Drain the water from the pasta once cooked and coat it with 1 tbsp of oil.
- Mix the ingredients: To the cooked pasta add the cooked vegetables and the rest of the ingredients. You can serve this dish cold or heat it for a few minutes and serve as a warm main course.
- Do not slice the vegetables fine. Having them in chunks gives this dish a good texture.
- Add in some basil leaves and chopped rosemary if you can get your hands on to some.
