Coriander-Mint Chutney Sandwiches


Ingredients:
Bread2 Slices
Coriander-Mint chutney2 - 3 tbsp
Cucumber2 - 6 Slices
PepperTo Taste
SaltTo Taste
Tomato2 - 4 Slices

Method:
  1. Spread the Coriander Pesto over both the slices of bread generously.
  2. Place sliced cucumber and tomatoes over one bread, season with salt and pepper. Then cover it with the other slice of bread.

Notes:
  1. Add grated cheese to the bread if you like cheese and toast the sandwich. 
  2. You can also eat the sandwich as a cold sandwich.
  3. Cut the bread into small circular shapes to make bite sized sandwiches that can be served for a afternoon tea party or a after-school / after-work snack.
  4. You can also try the Coriander Pesto as an alternate to the pesto.
