Coriander Pesto


Ingredients :
Bell pepper (Capsicum) 1
Dried mint 1 tbsp
Lemon Juice 1 tsp
Milk or Cream 1 tbsp
Olive Oil 1 tbsp
Onion 1 Medium
Pepper To Taste
Pine Nuts 1 tbsp
Red Wine 2 tbsp
Salt To Taste
Unsalted butter 1 tbsp

Method:
  1. Prep the vegetables : Chop the onion finely and the capsicum into cubes. 
  2. Saute Onion and Bell pepper: In a pan heat the butter and saute the onion. Once the onion becomes translucent, add in the bell pepper and saute till it softens. Remove from the pan and let it cool. 
  3. Blend the ingredients: Blend the saute'ed onion and capsicum with the rest of the ingredients except the wine in a blender. Drizzle the red wine slowly as you blend the mixture. Blend the mixture till it turns out fine. 

Notes:
  1. If you prefer, the pesto to be grainy, then do not grind it fine.
