Ingredients:
Ciabatta Bread | 2 |
Cherry tomatoes | 6 |
Cucumber | 1 |
Olives | 10 |
Pepper | To Taste |
Salt | To Taste |
Sun-dried tomatoes | 10 |
Method:
- Chop the vegetables: Slice the cucumber and halve the cherry tomatoes and olives.
- Halve the Ciabatta and place the cucumber rings, tomatoes and Olives. Then add in Sundried tomatoes. Season with Salt and pepper.
- Serve the sandwich with capers, jalapenos, mustard sauce and tomato sauce. You can add in these as optional.
- Serve with Olive or Corn salad as a side to complete your meal.
Notes:
- The Ciabatta bread can be replaced with a bread of your choice.
- I like to drizzle a bit of flavored olive oil on the bread rather than spread butter.
- You can choose to also add in some mayo with in the sandwich.
- Capers are tangy and pickled, so add them only if you like the taste.
- This sandwich can be eaten without grilling.
