Tomato Olive Cucumber Sandwich

  1. Chop the vegetables: Slice the cucumber and halve the cherry tomatoes and olives.
  2. Halve the Ciabatta and place the cucumber rings, tomatoes and Olives. Then add in Sundried tomatoes. Season with Salt and pepper. 
  3. Serve the sandwich with capers, jalapenos, mustard sauce and tomato sauce. You can add in these as optional.
  4. Serve with Olive or Corn salad as a side to complete your meal.

  1. The Ciabatta bread can be replaced with a bread of your choice.
  2. I like to drizzle a bit of flavored olive oil on the bread rather than spread butter. 
  3. You can choose to also add in some mayo with in the sandwich.
  4. Capers are tangy and pickled, so add them only if you like the taste.
  5. This sandwich can be eaten without grilling.
