Vegetable Rice (Thai Style)


Ingredients:
Chopped mixed vegetables3 Cup
Coconut Milk2 Cup
Ginger Garlic Paste1 tbsp
Green Chili2
Oil1 tbsp
Onion2
Rice2 Cup
SaltTo Taste
Water2 Cup

Method:
  1. Prep the Rice: Wash the rice and soak it in water.
  2. Prep the Vegetables: Slice the onion. Slit the green chilli. Clean and chop the mixed vegetables
  3. Cook the Vegetables: Heat Oil in a pressure cooker, Add in ginger garlic paste, onion and green chilli. Saute till the ginger garlic paste cooks and the onion becomes translucent. Add in the chopped vegetables and saute for 2 mins.
  4. Add in the washed rice without the water in which it was soaked. Add in the coconut milk, 1 cup of water, salt and pepper. Cook the rice with the same number of whistles as you would normally cook rice.

Notes:
  1. Pick and mix vegetables of your choice. We used carrot, beans, peas, brocolli and potato. 
  2. If using florets like brocolli and cauliflower, don't measure these with the rest of the vegetables in cup measurements in the recipe. Add florets in addition to the chopped vegetables
  3. Add a pinch of turmeric powder (about 1/8 tsp) if you would prefer that the rice be light yellow colored.
  4. Preferably use Basmati rice or a long grain rice.
  5. If you do not have a pressure cooker, you can use a saucepan. Cook the rice for 10 -15 mins till the water is absorbed.
