Chettinad Mushroom

Looking for something spicy to wake up your taste buds? Well the best way to do that is to try out some dishes from one of the spiciest cuisines in India.. The Chettinad cuisine. Here's a mushroom recipe Chettinad style. 

Replace the mushrooms with vegetables of your choice and you have Chettinad style vegetable curry. The base Chettinad masala is what is important what you add into the masala is your person preference. A great recipe especially for the cold weather to tingle your senses.

3 cups or 350 gms chopped mushrooms
1 onion, sliced long (julienne)
1 tomato, chopped
3 1/2 tbsp tamarind extract
1/2 tbsp fenugreek seeds
3 Kashmiri red chili
1/2 tbsp split gram
Fresh coriander leaves
4 tbsp vegetable oil
Lemon juice to taste
10 curry leaves
Water to taste
Salt to taste

Chettinad Curry Paste : 
1/2 cup grated coconut
1 tbsp coriander seeds
1 tsp red chili powder
1 tsp turmeric powder
1 tbsp black pepper
1 tbsp cumin seeds
10 garlic cloves
1/2 tbsp fennel
15 curry leaves
1 inch, ginger
5 cloves

  1. Make the Curry paste: Dry roast all the ingredients for the "Masala Paste". When the ingredients start giving out a nice aroma and start turning color. Switch off the stove and let the spices cool. Once they cool, blend the spices with a little water and a tbsp of oil. Keep the masala mixture aside.
  2. Heat oil in a pan. Add red chilies, fenugreek seeds, split gram, curry leaves and onion. Saute the onion till they become translucent. 
  3. Now add the prepared curry paste and mix it well. Add the tomatoes, tamarind extract and the mushrooms along with some water if the mixture becomes too thick and dry. Mix well and allow the mixture to cook in a medium or low flame for around 10 - 12 mins.

  1. Add water little at a time. The curry is best if its thick so its important that you do not add up too much water and make it runny. 
  2. Chettinad dishes are very spicy and hence adjust the red chilies and the red chili powder according to taste if you cant handle spice.
