Linguine Pasta in Tomato Sauce

On a lazy day, when I don't really want to cook too much but want to still enjoy a comforting special Italian meal.. this one pot wonder is what I would reach out to. Simple wholesome filling food and you would love to fork up!

200 grams linguine pasta, uncooked
1 1/2 cups cherry tomatoes, halved
1 onion, chopped
1 vegetable stock cube
6 - 8 fresh basil leaves
1 tablespoon dried oregano
1/2 teaspoon red chili flakes
2 garlic cloves, crushed into a paste
2 tablespoons Parmesan cheese, grated
2 tablespoon Olive oil
Salt to taste
Pepper to taste


  1. Boil the water:  Place a pan with 700 ml of water on the stove on high flame. Add the stock cube to the water and let it boil
  2. Cook the pasta: Once the stock boils, add all the ingredients to the pot except the basil leaves and the grated Parmesan cheese.Add only half the basil leaves and the Parmesan cheese. Stir and cook the pasta in a closed pot until the pasta is cooked. This will take around 10 - 15 mins depending on whether the pasta is fresh pasta or dried. Check the past every 5 minutes and add more water if required. Adjust salt & pepper as per taste.
  3. The dish is ready to serve, Serve hot garnishing with the remaining basil leaves and shavings of Parmesan cheese.
