Green Pesto Pasta

Green is the new trendy food color.. Eat green leafy vegetables. Drink a green smoothie.. Have a green salad. Green is the new favourite color of all health freaks!! So, getting into the trend, here's a healthy green pesto pasta recipe with the goodness of spinach and kale in it. 


Ingredients:
3 cups Penne Pasta
2 cups cherry tomatoes, halved
1/2 cup mozzarella cheese
1/2 tablespoon olive oil
3 garlic cloves
1/2 cup water

Spinach, Kale Pesto:
2 cups spinach
1 cup kale
1 cup basil
3/4 cup almonds
1/2 cup olive oil
1/4 cup parmesan cheese
1/2 teaspoon rock salt
3 garlic cloves
Juice of 1 lemon

Method:
  1. Grind the pesto: Blend all the Pesto ingredients in a mixer or food processor.
  2. Cook the pasta: Cook the pasta based on instructions in the pack.
  3. In a pot, add olive oil and saute garlic till it leaves out an aroma. Then add in the tomatoes and let them reduce. This may take around 10 minutes. Now, add in the pasta and blend it with the tomato sauce. Switch off the flame.
  4. Mix the pasta with the Pesto and place it in a baking tray. Sprinkle the mozzarella cheese over the pasta and bake it in a preheated oven at 200 degrees Celsius for 10 - 15 mins.

Notes:
  1. Make sure you pre-heat the oven when you start cooking. 
  2. Use cheese of your choice through out the recipe depending on what is available. 
  3. If you do not have rock salt, add regular table salt.
