No Cook Strawberry Shortcake Frozen Dessert

Let me tell you how this recipe came about.. You guys are all aware about the craze over the past few years over frozen yogurt. I don't know where and how it began or why it became such a rave.. But you can now see large ice cream makers and super market brands are stocking up their shelves with these. Suddenly Ben and Jerry's has atleast 5 different flavors of frozen yogurt!
 

Among the flavors in the Ben and Jerry's frozen yogurt range the one that caught my attention was the strawberry shortcake flavor.. cos I happened to have shortcake biscuits at home and had just brought some fresh juicy strawberries.. So why not just make it at home. I set out by whipping some yogurt in a bowl and then adding in coarsely crushed shortcake biscuits and some finely chopped strawberries. Unaware of any proportions, I was dependent only on my sense of taste and building the recipe by adding in small portions of each ingredient till I was convinced I had it right!


You just saw how the mixture looks before it went into the freezer to form this frozen mouth-watering goodness which tastes almost like ice-cream..To be fair, I haven't tried the Ben & Jerry's version and had nothing to sort of rate the success of the dish expect for the fact that the entire bowl of yogurt was licked clean by my hubby and me in literally 2 nights!



Something about making these at home makes these guilt free to enjoy.. We knew exactly what went in and that definitely made this dessert a sin-free pleasure! Check out the recipe and you will realize how easy it is to make. Its a quick dessert that your kids can help you make and something you can whip up for a party if you have just a few hours. 

Ingredients:
3/4 cup fresh strawberries, chopped
5 Shortbread biscuits, coarsely crushed
1/2 cup sugar
1 1/2 cups thick yogurt

Method:
  1. Mix all the ingredients together well. Beat them together for a few minutes and then freeze it for 4 to 6 hours.
  2. Scoop the yogurt using a ice cream scoop and serve it chilled.

Notes:
  1. Adding sugar is optional. Adjust the amount of sugar based on your sweet tooth. If your strawberries are extra sweet, you probably wont even need the sugar.
  2. You can also choose to puree half the strawberries and chop up the other half and add them. 
  3. Coarsely crushing the biscuits and adding in chopped strawberries, gives the dish a nice texture as it add a crunch to the smooth frozen yogurt. 
  4. Serve topped with some crushed biscuits, fresh fruits and a sprinkle of chocolate powder / shavings if you please.
