Spiced Roasted Egg

This a very simple boiled egg recipe to give it a little spice rather than just serving it up with salt and pepper, especially when you don't have time to make a egg curry. A recipe for those days when there is no time to cook something elaborate. 


This was a dish we had at a friend's place and I was impressed at how quickly she made these spiced eggs. We just love these simple and quick dishes that take our meals to another level. 

Ingredients:
4 Eggs
1 tablespoon oil
1 teaspoon chili powder
1/4 teaspoon pepper powder
1/4 teaspoon turmeric powder
8 Curry leaves
Salt as required

Method: 
1. Boil the eggs and peel off their shells. Slit the eggs on 4 sides ensuring you don't halve it. It should only be a slit. Keep the slit eggs aside.
2. Heat oil in a pan on low or medium flame. Add the curry leaves and the spice powders to the oil. Mix the spices with the oil to make a masala paste. 
  
    

3. Now add the slit egg and roll them and coat them well with the spice masala paste. 


4. Roast the eggs in medium flame for around 7 mins, till each side starts getting roasted and slightly changes color. Make sure you watch the eggs and flip them over. 
5. Serve the eggs hot with rice or roti.

Notes:
  1. We used regular hen eggs for the recipe. 
  2. Hard boil the eggs. We haven't tried half boiling them.
  3. While slitting the eggs, make sure you do not cut the egg into half. The slits are made to ensure all the spices can seep into the egg and spice it up from within.
  4. Adjust the chili powder and the pepper powder to your taste.
