Spinach Flat bread / Roti

Popeye is going to be pleased seeing this flat bread. This is a no yeast, instant flat bread or roti recipe. As green is the trendy color of health freaks and everyone is always talking about how to get the greens into your diet, here is a recipe that will help you sneak in loads of greens and will get you coming back for more. 


As you can see from the pictures, I am still working on making the perfect circular roti. Mine aren't perfect and same-sized as a pro-cook would possibly roll up... I am still in awe at people who can do it at ease. 


All that said... You got to tear the bread into bite sized pieces anyway when you eat it... So, shapes don't matter in the end as its the taste that reigns supreme.. :)  Hope you enjoy this dish as much as we did. 

Ingredients:
2 cups wheat flour + additional for dusting
2 cups Spinach leaves, heaped
2 green chilies, torn into halves
2 cm long ginger piece
2 tablespoon of oil
Salt to taste

Method:
  1. Puree the Spinach: Grind the washed spinach leaves with the ginger and green chili together in a blender to a thin liquid consistency. Make sure there are no chunky bits.
  2. Knead the dough: In a mixing bowl take the wheat flour and salt (about one teaspoon). Pour the prepared spinach puree and get your hands in to knead the flour mixture into a soft dough. Once the dough is formed into one big round ball. Take a tablespoon of oil and smear it around the dough ball. Allow the dough to rest for around 10 minutes.
  3. Roll the flat bread: Break the dough into around 3 - 4 cm diameter size dough balls and roll it flat using a rolling pin into a 12 - 15 cm size diameter flat bread. 
  4. Bake the bread: Heat a flat skillet on the stove top. Once the skillet is hot, place the rolled bread on it. Brush the bread lightly with oil. You will notice it fluffing up. When it fluffs up, press it with a flat ladle all around it and then flip the bread over to cook the second side. You will notice the second side fluffing up as well. Once you see a few brown spots on the second side, the flat bread is cooked and ready to enjoy. 
  5. Serve the flat bread smeared with a blob of butter. Enjoy it with some pickle and yoghurt. 

Notes:
  1. Do not add additional water while making the dough or while blending the spinach. The spinach will leave water.
  2. Skip the green chilies if you don't want to make the bread spicy.
