Kale Orange Salad

Well, I know I have shared with you guys my favorite milkshake ever and I thought why not end this week, sharing one of my absolute favourite Salad recipe. By favorite I mean really really favorite cos when my husband makes this I could literally eat the whole thing up without leaving a single crumb (Most of the times not even enough for him...) 

I am not going to write about all the stuff about how super healthy Kale is and how its supposed to have anti-cancer properties and what not.. Cos end of the day when I see a plate of food, all I want it to be is comforting and delicious.. so delicious that I could lick the last morsel of the plate.

So, here is to the best ever Salad recipe. I can hear myself singing at this point "These are a few of my favorite things".... I never thought I'd have a favorite dish and this question on what's your favorite dish would always get me thinking.. Now then when Vinay made this Salad.. I knew it.. I knew this was the one .. and that my wait was over! LOL! Too much drama over a salad you may think but I can assure you this is the real deal! The best recipe with Kale.. 

200  gms Kale leaves, chopped roughly
1 ready to bake baguette
2 tablespoons unsalted butter
1 large onion, finely chopped
1/4 cup, Cheddar cheese
1/4 cup, Mozzarella cheese
1 Orange, peeled and slices chopped after membrane removed

For the Dressing: 
2 tablespoons Olive oil
2 tablespoons lemon juice
2 tablespoons orange juice
2 tablespoons balsamic vinegar
Salt to taste
Pepper to taste

  1. Bake the Baguette : Follow instructions in the pack and bake your baguettes till they are done and nice and crisp on the outside. 
  2. Prep the Baguette: Once the baguette has cooled, slice or tear it into small chunks. 
  3. Cook it up: Heat 2 tablespoons of butter in a pan placed in medium heat. When the butter melts, add the chopped onion and saute it. Once the onion softens, add in the torn baguette pieces and coat them with the butter and onion mixture. Now switch off the stove and toss in the cheese and mix it with the bread. Transfer to a large salad mixing bowl. 
  4. Make the salad dressing: Mix Olive oil, balsamic vinegar, lemon juice, orange juice, salt and pepper in a small bowl. 
  5. Whip up the salad: Add in your chopped Kale leaves to the large mixing bowl with the buttered cheesy bread and onion mixture, add in the orange and then the salad dressing. Toss the salad well. Check the seasoning and serve the salad.

  1. We swapped Baguette with tortilla once and that turned out well as well. Obviously instead of oven baking you just have to heat your tortilla over a pan and then tear them into small pieces. 
  2. If you wont be baking your baguette fresh, you can also buy shop bought baguette and warm it up in the oven for 5 - 10 mins, till its crisp outside and soft in the inside. 
  3. We prefer red onions for this salad to give the salad a pop of color and the red onions just taste better.

Psst.. The pictures here are of a Kale salad with tortilla and not with the baguette.. cos we ran out of the french baguettes and decided to give it a mexican twist.
