Pina Colada Dessert

For those who do not know what a Pina colada is.. Its a pineapple juice, rum and coconut based cocktail. Those of you who do not prefer alcohol.. fear not.. this is a non-alcoholic recipe and those who don't mind a dash of spirit.. this dessert will lift your spirits without any alcohol in it. I am so glad I discovered this recipe. This has now become one of my favorite dessert recipes that is so simple to prepare.. as long as I have pineapple at home...(Most of the other ingredients are generally in my kitchen..)

P.S In the picture above I wrote grilled pineapple over the cored pineapple which wasn't actually grilled.. just in case you guys were wondering. The grilled pineapple rings are only the one's on the plate.

By the way, this is the most fantabulous dessert dish when you are throwing a Barbeque party! Grill the Pineapples over a barbeque and you will be the star of the night / day when you serve up this dessert. This one will get your friends smiling and will get them craving for more. We can say this.. cos it's tried and tested several times!

If you love pineapples but find it annoyingly tiresome to peel and core a pineapple like I used to.. Here's a little trick to peel, core and slice your pineapple into perfect rings every time and in under 2 minutes. No it's not magic... No it's not a technique that needs lots of practicing accuracy and mastering.. All you need is to get this fantastic pineapple corer! It's the one of my favorite kitchen gadget's ever and it costed me around 2 GBP when I bought it from amazon.. For those who haven't heard of it... Check it out on Amazon. You should own one and gift it to your friends who are pineapple lovers!

1 Pineapple, peeled, cored, sliced
1/2 cup Brown Sugar
200 ml Coconut Milk
3 tablespoon, Desiccated Coconut, toasted
1/2 cup Greek Yogurt


  1. Make the Coconut Caramel : In a pan add the coconut milk and stir in 1.2 cup brown sugar. Keep stirring till the brown sugar dissolves and mixes with the coconut milk and the coconut milk slightly reduces and thickens
  2. Flavor Yogurt : Mix the toasted desiccated coconut to the Greek yogurt and set it aside. 
  3. Grill Pineapple: Smear each pineapple slice with brown sugar and grill till it gets nice grill marks. 
  4. Serve the pineapple while it's hot with the greek yogurt on the side and drizzle everything with the coconut caramel. 

  1. There are many varieties of brown sugar in the supermarket these days, so if you are confused, use the light brown Muscovado sugar. Any brown sugar will work fine as well. 
  2. Fat free Greek yogurt tastes great with this recipe.
  3. If you are making this recipe for a party, prep the coconut caramel and yogurt even a day ahead and refrigerate. Grill the pineapples, just before your guests are ready for desserts.
  4. We used a sandwich press to grill the pineapples. The Breville Sandwish press that we own is another kitchen gadget that we love as it has so many versatile uses.
